TRADITIONAL ROMAN DISHES are simple yet rich in flavor, thanks to the authentic ingredients that characterize them.
Each dish is EXTREMELY FLAVORFUL thanks to the key ingredients we use, such as pecorino romano, guanciale, and black pepper. These ingredients, which are at the heart of Roman cuisine, give the dishes a bold and unmistakable flavor, which can be SALTY compared to other preparations.
We would like to point out that, in keeping with tradition, we do not use cream as is done in many tourist restaurants; our cuisine respects the authenticity of the recipes, without adding ingredients that could alter the genuine flavor of these dishes.
We are confident that you will appreciate the true essence of Roman cuisine, characterized by simplicity, but also by great quality and flavor.

For non-Italian tourists: In Italy, pasta is eaten "AL DENTE" (this refers to the ideal cooking time for pasta, which is not fully cooked, maintaining a slightly firm texture, but not sticky or tacky).

To offer you safe and tasty gluten-free pasta, we use dried pasta, which requires a few minutes more cooking time (15 minutes) than our traditional fresh pasta (4 minutes).
