TRADITIONAL ROMAN DISHES are simple yet rich in flavor, thanks to the authentic ingredients that characterize them.
Each dish is EXTREMELY FLAVORFUL thanks to the key ingredients we use, such as pecorino romano, guanciale, and black pepper. These ingredients, which are at the heart of Roman cuisine, give the dishes a bold and unmistakable flavor, which can be SALTY compared to other preparations.
We would like to point out that, in keeping with tradition, we do not use cream as is done in many tourist restaurants; our cuisine respects the authenticity of the recipes, without adding ingredients that could alter the genuine flavor of these dishes.

For non-Italian tourists: in Italy, pasta is eaten "AL DENTE" (this refers to an ideal cooking of the pasta that is not completely cooked, maintaining a slightly resistant consistency to chewing, without being sticky or gluey)
