We are happy to introduce you to one of the specialties of Rome and the Lazio region: the PINSA ROMANA ARTIGIANALE. However, it is important to know that it is not the traditional pizza that you might expect. Our PINSA ROMANA ARTIGIANALE stands out for several characteristics that make it unique and very special.
It is not the classic round and soft pizza, like the Neapolitan one. It has an elongated shape, similar to a tongue, and is crunchy and light thanks to a special combination of flours (wheat, rice and soy) and a long leavening process. In fact, our Pinsa is left to leaven between 24 and 48 hours, which makes it particularly digestible and light.
Furthermore, the high hydration of the dough (about 80%) and the careful selection of flours give the PINSA ROMANA ARTIGIANALE a unique consistency: crunchy on the outside, soft on the inside.
So, don't expect a traditional pizza, but an authentic ARTISAN PINSA ROMANA, prepared with passion and attention to detail, just as the Roman tradition dictates!
